Tamar Britton recently shared some of her healthy recipes at a holiday pot luck party with members of the Dogwood Circle of the Mandarin Garden Club. Britton is retired from the Duval County Extension Service and called on her 38 years of experience in nutrition education to encourage members to stay active in retirement and to include generous amounts of fresh ingredients in their healthy diets.

Britton whipped up a batch of fresh pesto by blending basil, parsley, dill, garlic and green onions with pine nuts, olive oil and parmesan cheese. She explained that pesto can be used on baked potatoes and other vegetables, in pasta or soup, as a spread for bread and in appetizers.

Britton prepared chicken linguine with pesto as members watched. With its generous use of red, green and yellow peppers, onions, garlic and tomatoes, it fit the bill for healthy eating.

As  she worked, she added helpful hints about using a salad spinner to dry washed herbs, toasting pine nuts and using fresh parmesan.
