Celebrate country style

With the month of July comes the celebration of our country’s independence. This includes family, friends, fireworks and lots of delicious grilled food. If there is ever a day that the grill gets its use, it is the Fourth of July. Traditionally, this involves hamburgers and hot dogs. While the kids are content with the simplicity, the adults may crave something more creative. And you never know, the kids just may like it too.
A meal our family really enjoys is grilled BBQ (Country Style) Pork Short Ribs, accompanied with a Dark Red Kidney Bean sauce, served over White Jasmine Rice with a side of seasoned French Green Beans. If you are shaking your head, saying to yourself, my child will never eat that, give it a try — they might just surprise you. Get them involved too. There are many things they can help out with when preparing this dish. Our children have some picky palates too, but they love to help create and eat this up with no complaints. I have found with our own kids, the more ingredients they experiment with, the more inclined they are to challenge their taste buds.
Impress your guests this July 4th with something different. We hope you enjoy this recipe.
BBQ Sauce:
1 cup ketchup
¼ cup sugar
¼ cup white wine or cider vinegar
¼ cup water
2 tbsp. lemon
1 tbsp. salt
1 ½ tsp. cumin
1 ½ tsp. garlic powder
1 ½ tsp. onion powder
1 tsp. chili powder
1/8 tsp. cayenne
Directions: Simmer for 20 minutes on low to reduce. Or you can use your own favorite recipe as well.
Country Style Pork Short Ribs
(Feeds Five)
2-3 lbs. Pork short ribs
Salt and pepper
Directions: Salt and pepper all sides. Indirectly grill for 1 hour, turning every 15 minutes. Glaze each side with barbeque recipe for 45 minutes, turning every 15 minutes.
Kidney Bean Sauce:
2 cans dark red kidney beans
1 cup chicken or ham stock
¼ cup diced sweet onion
¼ cup diced green pepper
¼ cup diced red pepper
1 tbsp. ketchup
1 tsp. chopped garlic
2 dashes worcestershire sauce
2 dashes Louisiana hot sauce
1 pinch salt
Directions: Rinse and drain beans. Combine all ingredients in a 1 quart pot. Simmer on medium-low, stirring often, until gravy thickens and the beans become tender.
Jasmine Rice:
1 package Jasmine Rice
1 tbsp. Extra Virgin Olive Oil
Pinch salt
Pinch pepper
Directions: Rinse desired amount. Cook according to the directions on the back of the package. Fluff and season with extra virgin olive oil, salt and pepper.
French Green Beans:
1 lb. Fresh French or regular green beans
1 tsp. Extra Virgin Olive Oil
|Pinch salt
Pinch pepper
Directions: Steam for 5 minutes. Toss in extra virgin olive oil, salt and pepper.
