Here is a super easy snack to celebrate Dad on Father’s Day. These nachos contain all the flavor of Buffalo wings without the hassle and mess of all that preparation and clean up. Adjust the amount of Buffalo sauce used to control the heat level.

Buffalo Chicken Nachos

Yield: serves 4 – 6
Prep time: 10 minutes
Cook time: 8 –10 minutes

Ingredients:

1 chicken breast
¾ cup buffalo sauce (More or less according to heat preference)
1 cup chicken stock
½ cup black beans, rinsed and drained
⅓ cup celery, chopped
⅓ cup green onions, chopped
1 ½ cup Monterey Jack cheese, shredded
Blue cheese crumbles
Tortilla chips

Add chicken breast, ½ cup buffalo sauce and chicken stock to a small saucepan. Cook over medium/low heat until chicken is cooked through. Shred chicken by hand or place in a stand mixer with paddle attachment and mix on low until desired shred is reached. Toss with remaining ¼ cup buffalo sauce.

Preheat oven to 425 degrees.

Spread a single layer of tortilla chips on a parchment paper or foil-lined baking sheet. Sprinkle with ⅓  of the chicken, celery, onions, beans, cheese and a handful of blue cheese crumbles. Repeat layers. Lightly drizzle with additional buffalo sauce, if desired.

Bake until cheese is fully melted, about 8 – 10 minutes. Serve immediately.
